Native yeasts.
Half of the volume is made using carbonic maceration to highlight fruit and drinkability.
The other half comes from free run juice from a short maceration, bringing a little more depth and complexity to the final wine.
Serving suggestions
Aureta was intentionally not degassed in order to protect the wine all the way to your glass.
After opening, you have two options:
- decant it for one to two hours;
- put the cork back in and shake the bottle vigorously to release the gas. Repeat the operation three or four times if necessary.
Then you can enjoy it:
- at cellar temperature;
- after 30 minutes to 1 hour in the fridge;
- after 10 to 30 minutes in the freezer when the thermometer goes crazy.
Tasting notes
Fruit. Lots of fruit... enough that, after one glass, you could almost consider that you've had one of your five daily servings of fruit and vegetables.

The palate is light, smooth and refreshing, with just enough structure to make you reach for the next glass.
Food pairing
A barbecue with friends on a beautiful summer evening.
You can also drink it with your mother-in-law and a bowl of soup on a rainy November morning.
But honestly, it won't be nearly as good.
